Oh So Good, Coconut Crème Cake

 So I know this isn’t a typical post about healthy eating (organic options included)

BUT Everything in moderation, right!?! 

Anyone who knows our family knows, that we know, that they know, that we know good desserts πŸ§πŸ˜›and for that wanted to share with you all this yummy scrumptious cake πŸŽ‚ I made.

Now once again, **disclaimer** I am not trying to be a cook πŸ‘©‍🍳 , so don’t come at me. 

I’m just doing my best πŸ˜‰ I searched around for the easiest and quickest recipe as I didn’t want to be baking for hours and this is what I came up with. Try it out, tweak it, but most of all enjoy 😊 Also, I have included the ingredients needed to make this organic as well! 


1 cup water πŸ’¦ 
3 eggs πŸ₯š 
1 container coconut πŸ₯₯  cool whip
1 (7oz) package sweetened coconut flakes

Make cake batter as recipe calls (add 1/2 bag shredded coconut πŸ₯₯  flakes)

I used a Bundt pan, also greased with avocado πŸ₯‘ oil.


In a separate bowl πŸ₯£ whisk together the condensed coconut πŸ₯₯ crΓ¨me and 1/2 of remaining coconut 🌴 flakes.

Once the cake is finished let it cool. (I put it in the fridge cause we were being super impatient 🀣)
Take your choice of poker (I used a chopstick πŸ₯’) and poke holes throughout the top πŸ” of the cake 🍰 

Pour mixture on the top and spread around to fill in holes. (Let cool again, and once again we chose to put that baby in the fridge to speed it up)


While waiting to cool 😎 place the remaining coconut flakes on a baking sheet at around 350, and toast them. (Watch out they can burn πŸ”₯ fast) I spread them evenly and tossed them around a bit every couple of minutes.

After letting the cake cool, I removed the cake from the Bundt pan. 

I spread the newly toasted coconut πŸ₯₯ cool whip on top and sprinkled the remaining toasted flakes.

It was good! Jaze told me it was the best cake he’s ever had πŸ˜‰ but he knows how to gas up his mother πŸ₯° and we def recommend waiting until the next day after being in the fridge overnight. Needless to say, it is gone today  πŸ€€ and thankfully so, the weekend splurge over and back to healthy eating on Monday!

 πŸ½Who doesn’t love a good pasta dish. 

Now I don’t claim to be a great cook, nor do I aspire to be. Kudos to those who have this passion on their heart as it truly is a gift. My main goal with my dishes is to feed a hungry family with foods that hopefully provide their bodies with all the right nutrients to do the best we can. #ad #amazonfinds

The Recipe 

3 gloves of garlic

1lb beef

4 cups spinach

2 cups dices sweet peppers (extra add-in)

1 can tomato sauce

2 packs Brown Rice Noodles (#amazonfinds)

He-Man was a courageous little dog 

with the biggest ❤️  I have ever seen. I had him since my high school days and that little guy went through A LOT of things right by my side. Many people choose to have animals be a part of what many realize becomes a family member. 

Often I am reminded of the maybe not so familiar saying ‘everyone's dog is the best dog’, and none of them are wrong. 

Well, he, my friend was one of the best! When Jaze was little I often would write him little books πŸ“š πŸ“– s about life’s journeys and if he had still had been little I would have read to him πŸ™‚

So through the years, He-man was a staple in our family. I imagine that many others have these special little visitors to assist us through life. When he finally passed after what I hope to have been a long happy life. I had a different conversation with Jaze, as age has graced us both.  It was always important to me to present real-life events to children in age-appropriate ways.

 Some days just call for body oil. πŸ’¦ 

I am kind of unsure of how to describe this type of day, maybe it is just to have some extra glam... but anyways?!? 

For those types of days, I have searched high and low to find what not only has worked the best for me but also does its best to give back to my girl, Mother Earth. I truly believe that better products produce better results not only for you but for her and all of her amazing wonders.... so anyways 

πŸ‘ŒGrowing up, of course, I have tried sooo many different oils,(I also had that one special friend who would put baby oil on in the shower and have us all busting our ass later on) but due to having problematic skin have learned to avoid certain products that more often than not cause clogging and more breakouts. Typically, I found this to be the case with mineral oils, cottonseed, or mineral oil varieties.  After researching a ton of articles about coconut oil found that it can provide many beneficial things to not only the inside of our bodies but the out too  πŸ˜‰

So getting on to the goods. It’s so simple. Purchase the coconut oil pump, pick out your favorite essential oil (for me this time was MANGO) add them to gather, and GO! Don’t forget to head on over to the Amazon shop and pick it up!
